Healthy & Yummy Brownies (that are 100% vegan & GF!)

Brownies without eggs, flour, and milk?! You're probably thinking -- they must suck. You're also probably thinking -- Can "healthy" and "yummy" describe the same brownie? Truth is, I was skeptical as well. The secret ingredient in these brownies may add to your doubt, but you have to give this recipe a try! Even the batter is delicious (as well as completely edible)! Aside from being totally yummy, this dessert is actually healthy. It's full of protein, fiber, other essential vitamins, and is low in sugar.

The two main ingredients in these brownies are to thank for the health benefits: black beans and oats! May sound like an odd pair, but blend the two together and they create the perfect base for these vegan and gluten-free brownies. This recipe doesn't require any crazy ingredients and it's made with things you probably already have on hand (except maybe dairy-free chocolate chips). Here are my fave vegan chocolate chips!

In order to make this dessert soft and fudgy, it helps to have a quality food processor. This is the food processor I use!

Healthy and Yummy Brownies (V & GF)

1 15.5 oz can of black beans (drained and rinsed)

1/2 cup GF quick oats

2 tbsp cane sugar

3 tbsp cocoa powder

1/4 cup plant-based milk

1/4 cup maple syrup

1/4 coconut oil

2 tsp vanilla extract

1 tsp baking powder

Dash of salt

2/3 cup vegan chocolate chips (plus more for garnish)

Start by preheating the oven to 350 degrees F. Grease a 8x8 inch pan with an oil-based spray.

Another reason to love this recipe, besides the health benefits, is the fact that it is super easy and is relatively low-mess - no bowls required! Simply add all of the ingredients (minus the chocolate chips) to the food processor and blend! It is important to blend well! I pulsed for a minute and then blended for two minutes. It should have a relatively smooth consistency. If it seems a bit too thick, simply add more plant-based milk, a tbsp at a time.

This is how it should look when blended. Next, hand mix the chocolate chips into the mixture. Add the brownie batter to your greased 8x8 pan (but not before trying some). Garnish the top with more chocolate chips.

Bake until the edges begin to brown, about 15-18 minutes. Let the brownies cool completely before cutting them into squares.

I garnished my brownies with confectioner's sugar after they cooled and there ya have it! Vegan and GF brownies that also happen to be fudgy and delish (& healthy!).
