Vegan Funfetti Mug Cake

I'm not a cake person, but there is something so delicious and satisfying about a good funfetti cake. Maybe its the rainbow colors, maybe it's the yummy cake-batter flavor, maybe its the nostalgia of childhood birthday parties. Whatever it is, it just puts me in a good mood! Another thing that gets me jazzed is a quick and delicious dessert.


This was my first "mug cake" experience and let me tell you, I've been missing out! Just a couple minutes of prep and a single minute of cooking and you've got yourself a sweet treat that will make you feel like it's your birthday!

Here are a few tips to follow before getting started.

  1. Melt the coconut oil in the mug FIRST! This way, you can legit use only the mug and save yourself the dishes. (You're welcome!)

  2. Check your wattage. My microwave is 1000 watts and it took 1 minute to cook this cake. For a 800 watt microwave, try cooking for 1 minute 20 seconds. For a 1200 watt microwave, start with 40 seconds of cooking.

  3. Use a medium size mug to ensure that the cake cooks through to the bottom. I used a 13 oz mug that is approximately 3.5 inches in diameter and 4 inches high. The exact glass mugs (that I am obsessed with!) are linked here.

Vegan Funfetti Mug Cake

1/3 cup flour (can substitute with GF all purpose flour)

3 tbsp cane sugar

1 tsp baking powder

1/4 cup plant-based milk (I used almond milk)

2 tbsp coconut oil

1/2 tsp vanilla

Dash of salt

1-2 tbsp rainbow sprinkles



Start by melting the coconut oil. Put 2 tbsp in the mug and microwave for ~20 seconds. Then, add the rest of the ingredients and stir.


Microwave ~ 1 minute, depending on your wattage and mug size. The top should be firm.



The cake should be cooked all the way through. If it is not, return to the microwave for 10 second increments.



Let it sit for a couple minutes while the cake cools and firms before eating. Top with some sprinkles and enjoy!
