Vegan & GF Chocolate Chip Cookies (that actually taste good)

I know what you're thinking...yuck. How can a cookie without butter, flour, and eggs be any good. Welllllll... I would encourage you to try this recipe out, even out of sheer skepticism. I have made these cookies many times and have perfected the recipe to give you a yummy, healthy-ish cookie alternative that is both vegan and gluten-free.
I will admit, this cookie dough has a grittier texture than the buttery-smooth "normal" cookie dough, although it does taste great and is completely edible. The dough will be a bit "wetter" than the usual stuff too. Just wait until they come piping hot out of the oven and you officially be a believer in this vegan/GF take on CCC (chocolate chip cookies)!
First preheat the oven to 350 degrees.
Next, collect your tools. All you need is one large bowl, one sheet pan, parchment paper, and a good ole' fashion spoon.
Now, collect your ingredients. You probably have most of the ingredients in your pantry, aside from maybe the almond flour and ground flaxseed. You can find these items in the natural/organic food isle at most grocery stores.
Vegan & GF Chocolate Chip Cookies
Ingredients
1/2 cup applesauce
1/3 cup almond butter
1/2 cup cane sugar
1/4 cup ground flaxseed
1 tsp vanilla
2 1/4 cups almond flour
1/2 tsp baking soda
3/4 cup dairy-free chocolate chips
Dash of salt
Begin by adding the first five ingredients to a large bowl. The little applesauce cups that you pack in your kiddos lunch is a 1/2 cup serving, which is what I always use. (Less measuring, duh.) Add this, the almond butter ("fat" that replaces butter), cane sugar (must be "dry" sugar - don't be substituting with agave), flaxseed (the ground stuff!!), and vanilla. Mix it up until all ingredients are incorporated.
Next, add the almond flour, baking soda, chocolate chips (can be milk chocolate if you aren't going for "vegan"), and salt. Mix it all up! Again, the dough will seem a bit wet and that's okay! Yes, it is a bit messier when rolling into balls, but it cooks up to make some fluffy, soft-on-the-inside, crispy-on-the-outside yummy cookies!
Next, line your baking sheet with parchment paper. Roll or dollop the dough into 1 inch balls and space a couple inches apart as dough will spread when baking. Place into the oven on the middle rack for 10-12 minutes.

Cookies should have a nice, golden finish when the baking is complete. Do NOT place on a cooling rack. The cookies need to finish baking on the sheet even after coming out of the oven. Give them a good 10 minutes on the sheet before indulging!
